Kiritsuke knives are considered to be multi-purpose traditional Japanese blades. They can be used as a yanagi (fish slicer) or an usuba (vegetable knife). These knives are shaped like sword and feature a straighter and longer edge. Traditionally, kiritsuke knives are used only by executive chefs as a status symbol.
This series of Sakai Takayuki Kiritsuke Japanese Sushi Knives is made from silver steel No.3. These Japanese knives do not rust. They are crafted following the blacksmith process of molding and polishing called "bladed" process.
